Mad Max Turkey Win

Happy Thanksgiving to my egghead brethren!

I’m here to report a victory today

18lber fresh turkey,  followed Mad Max recipe
350 indirect with PS, temp control at Grid using CyberQ,  4 hours bird on to bird off
No extra wood chips today
No brine

Our meal was fantastic!  Juicy white meat and juicy dark,  pulled bird after Thermapen read about 163 in the breast and 180 in the thigh (despite the guru saying the breast was 175, it was 10 degrees cooler after multiple checking spots deep in the breast).

Wife, Kids and In-laws said it was great!  

Also a cornbread&sausage stuffing my wife made was delicious!









Only failure was the gravy, I followed the Max  recipe but it was just a greasy mess and I had to toss it,  it was probably just my bad,  luckily we used the turkey giblet stock and whipped up a simple backup gravy
