Ice the Spatchcocked Turkey Breast?

When mad-maxing a whole turkey, I ice the breast for 20 minutes before it goes on — fantastic results, always. 

I’d never ice a spatched chicken’s breast(s), so I assume I’d never ice a spatched turkey either.

Can’t hurt to check in with the eggsperts!  Bird will go on at 230 or so — I’ve got some time to obsess over this if I were inclined to over think things.
