It was that time again. Ground some chuck and sirloin. Hit it with a bit of Montreal. Stuffed with a mix of fontina (funky) and cheddar (sharp). Egged and crusted up on the CI. Topped with pickled jalapeños, bacon, iceberg and secret sauce (Dukes, chopped pickled jalapeños, Heinz). Served with tots. Heaven.












It's a 302 thing . . .

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

How long roughly do you cook these direct on the egg compared to regular burgers? I’m assuming they go quicker since the middle is cheese instead of meat.Also love the combo of grilling them searing on cast iron at the end for a smashburger type crust, best of both worlds. They look incredible!

Thx, all! Forgot to mention that the secret sauce has some Tabasco pepper jelly mixed in. That stuff is awesome and can be used in all sorts of unexpected ways!It's a 302 thing . . .

Depends on the patty thickness and temp, but about 4-5 minutes a side does it at 450-500 degrees and the grid below the felt to get that initial char before the CI does the rest.UNCHeels08 said:How long roughly do you cook these direct on the egg compared to regular burgers? But I’ve found that for this application, the medium side of medium rare works best. Otherwise it’s a complete sloppy mess. (Not that there’s anything wrong with that!)It's a 302 thing . . . -
