Red Curry Chicken

Generally cool weather gets me in the more of a mood to get the wok hot. Today was a rainy day so I wanted a little bit of curry tonight.  

Got the white part of some green onions and some red curry paste getting happy.  The smells of the curry are crazy good 


Next some cubed up chicken tenders go in for a good O’l curry coating 


Then some red pepper strips 


Then the chicken stock, coconut cream and fish sauce go in for a bubble and reduce a bit 


Next up we add kaffir leaves and thai basil leaves 


And ready eat

    Dude.  You just, like...know me.  I craved this today. It’s a cool, rainy day here as well, and I’m coming down with a cold.  Red curry sounded good for dinner, but we had spaghetti and meatballs instead. 

    Assuming you live more than an hours drive from Omaha, I’ll have to opt for takeout tomorrow.  I gotta have this now!

    If you have a recipe, or at least some quantities for coconut milk, chicken stock and fish sauce, I’ll take them!

    @SaltySam - roughly 4T of red curry, 1/2 cup coconut cream,1 cup of chicken stock /water, eyeballed 1T fish sauce and a good squeeze of lemon juice

    Looks so great.  I would add lemongrass, carrots, some bamboo shoots, and a touch of brown sugar, but otherwise, that's how I make it.

    I’m with you on lemongrass.  I thought I had some fresh but Mrs3969 disposed of it during a fridge clean out.

    Love it. Red curry is one of my favorites. 

    +1 for lemongrass. We used to have some in the garden, but now I keep some vac sealed in the freezer to use as needed. Works pretty well.

    I would consider it high heat by any means.  Nothing like stir fry heat.   The egg was prolly close to a stable 350ish when I started.

     You'd be amazed by the useless info I carry in my brain :) I recently impressed a friend because I deduced that he bought his Weber from HD (because it had CI grates).

    I got tired of throwing away herbs bought from the store so started vac sealing and freezing the unused portions. Works great if using in dishes, but they don't do so well for garnishing after being frozen.
