Buttermilk Plantain-Banana Nut Muffins

I had two plantains that were beyond overripe taking up precious counter space and decided to put them to use instead of pitching them.















Served a few with a small, pan fried 40-day dry aged Wagyu picanha steak and two eggs over easy.  Made for a very tasty and filling breakfast.

It's "Smokin Gal", not "Smoking Al".

    Sure thing @johnnyp.

    • 1 1/4 cup sugar
    • 1 stick softened butter 
    • 2 large eggs
    • 3/4 cup mashed bananas (very ripe)
    • 3/4 cup mashed plantain (very ripe)
    • 1/2 cup buttermilk
    • 1 1/4 tsp vanilla extract
    • 2 1/2 cups AP flour
    • 1 tsp baking soda
    • 1 tsp salt
    • 3/4 cup walnuts 
    1) Sift all dry ingredients together.
    2) In second bowl, cream butter and sugar together.
    3) Add eggs, buttermilk, mashed bananas and plantains, and vanilla extract to creamed butter mixture and beat on medium speed until creamy.
    4) Stir in sifted flour in batches, leaving the batter somewhat lumpy.  If using walnuts, add them in during this step.
    5) Bake at 400F for 15-25 minutes (depending on oven), until a toothpick comes out clean (no batter).
    6.  Allow muffins to rest in pan for 3 minutes before removing.

    It's getting to where I can just read a title like, "Buttermilk Plantain Banana Nut Muffins" and my brain asks immediately, Smokin Gal?  
    Look delicious!  Did you use more sugar that usual with the plantains, vs. just bananas?  (I don't make banana baked goods, so don't know from the recipe)

    @Botch The plantains, even though super ripe, aren't very sweet.  They are more tart than sweet.  But I just modified a recipe I use for banana nut muffins to incorporate the plantains.  Nothing else changed.  They are just sweet enough, not too sweet.
