Last minute change of plans

We have a couple of tri-tips marinating in a teriyaki marinade, have the ingredients for the BGE blackberry, peach, and amaretto cobbler, and a mushroom in pastry appetizer. We were reminded Thursday night that one of our two guests is on a gluten free diet. So the BGE will be ignored today. Ynette went shopping for some steaks and whatever non gluten stuff we could prepare easily. The tri-tips will be egged tomorrow for consumption for the coming week.
I decided to break with my reluctance to use sous vide for red meat, and I am going to SV the steaks and then sear on a 700 degree cast iron pan on the gas grill. I am thinking 90 minutes at 132 for the medium rare folks, and 120 for me. I do have two SV's, a Joule and an Anova, but I might do mine first and put it in the refrigerator, then raise the temp and do theirs. Any further suggestions welcome!
The wine choice will be entirely mine, and I only have to share with Ynette. The others are non drinkers. Family - what can you do?
