Weekend cook ideas

Hey guys! I want to cook this weekend but I’m at a loss for a good recipe. I have some already roasted and diced extra hot hatch chili peppers that I want to incorporate with meat, preferably a smoked meat. 

Im at a loss what to make cause I usually use the roasted diced peppers for a chicken Mac or something. Any ideas?

Green chili meatloaf? Green cheeseburgers? Green Chile soup, pork or chicken?

How about a big pot of chili with:

Pulled or chunked pork.

Hatch chiles.

Onions.

Garlic.

Rotel

White pepper

EVOO

Coarse salt

Worcestershire sauce

Chicken broth

Masa at the end of the cook.

I could def. do a meatloaf. I also had though of the chili idea also, it’s FINALLY starting to feel a little like fall.
