Turbo butts for Saturday

Hey all,
Doing a couple of turbo butts for the first time, got a question about temps and fire.
I had the egg to about 375 before I put the butts on. I opened the lid, burping it as not to singe my arm, once I had it open all of the lump immediately lit and started shooting flames from underneath the plate setter.
I suspect it is because I didn't shut the bottom vent but it is the first time I had experienced this at a relatively low temp. Additionally, after I closed the lid, a back draft was shooting flames from the bottom vent. Inspecting from a distance I could see that the gasses in the bottom were lit.
I'm sure it's normal, just not something I've seen before.

I haven't seen that either. Did the temp stabilize at or near the temp you wanted? Glad no hair or eyebrows were singed in the making of your last post!
-
Yeah everything stabilized at 350 and had been steady since 5:45. Seems to be coming a little faster than expected. Butts are at 160 and 180 3 hours in.
Planning to eat around noon, should I dial it down a little? -
You could or let 'em ride and FTC if necessary. Even stow them in a warm oven.Philly - Kansas City - Houston - Cincinnati - Dallas - Houston - Memphis - Austin - Chicago - Austin

Yeah I plan to stow then in the oven. Any worry for them cooking too fast? Again, never done turbo.dmchicago said:You could or let 'em ride and FTC if necessary. Even stow them in a warm oven. -
I've never NOT done turbo butts. I run mostly 325 to 375...where ever the Egg settles. As many here say, Pork Butt is very forgiving.Philly - Kansas City - Houston - Cincinnati - Dallas - Houston - Memphis - Austin - Chicago - Austin

Yes, dome and grate probe read the same.dmchicago said:Also, is your dome thermo calibrated? -
So the flames were from a bigger fire than necessary then being choked down to hit the desired temp. It was starving for oxygen and found a rush of it when you opened the dome.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Thanks all. The butts turned out fantastic, sorry don't have pictures. As said before, they are very forgiving.
The butts reached temp in 4 hours, foiled and put in the oven for two hours. Out of 12 pounds, maybe half pound is left.
