SRF Skirt Steak for Carne Asada

My family is in town visiting from the Midwest so I decided to splurge for two SRF skirt steaks to make Carne Asada. I took a teaser shot this morning as I started the prep. 

One technique I’ll share is to thaw the skirts overnight in the fridge. Next day, unpack and stick the skirts between two pieces of butcher paper. Roll them out pretty thin with a rolling pin. This serves to tenderize the beef and also makes it easier to cook uniformly. More photos to follow later tonight.
