I caught a sale on split chicken breasts tonight. They are currently in the fridge taking a buttermilk bath. Which is the most compatible rub: Peruvianish, John Henry Sugar Maple, Albukirky Sweet Red or Green Chile. There are others but these are the convenient ones. Can’t blow the heat due to relatives with touchy guts( red pepper doesn’t bother her as much as black)

If you use Chef John's buttermilk recipe, you won't need any additional rub. Peruvian-ish would be good, if you are simply using buttermilk.

Busy doing potential hurricane prep tomorrow so no time to be fancy. I think that I will go shake some Peruvianish in to the bowl and let it preseason the chicken.
