Chicken Rollatini with Spinach Parmigiana and Spaghetti Squash

Mixed up some ricotta,moz and spinach for the filling to be rolled up in the thin chicken breast. Rolled in egg wash and then in a mix of Parm and breadcrumbs On the egg at 450 over the spaghetti squash rings
Once the chicken hit 155 I hit it with homemade marinara and fresh moz
Once it got all melty and happy everything went indoors
And plated up.
I got told to save this one. It was good. Thanks for looking

@smokingal - I cut into ring, hit it with Italian seasoning and roast at 400° for about an hour until it gets probe tender. Pull the strands and eat in place of spaghetti. Taste wonderful with a good meat sauce on top. I cut into rings because you get longer strands that way.

Even though I love pasta (but eat it infrequently), I find that I don’t really miss it all that much when using spaghetti squash as a substitute. It’s a great replacement.
