Jerk Loin

Scored a pork loin and then rub with Walkerswood paste. Let it sit overnight in the fridge. About 3 hours before throwing on the egg added some OJ. 


Also made some Mexican street corn. 



Topped the loin slices with a mango avacado salsa.

    Any cook with Walkerswood Hot and Spicy is a winner.   Never thought to use in that fashion.  The street corn just takes the whole banquet up another notch.  Great cook and eats right there. 
    Encore will have some work to climb that hill.

    Roasted the corn direct. Once inside "painted" on a concoction of mayo, Mexican crema, lime juice, garlic salt, and cilantro. Then added cojita cheese.

    Recommend doing it. While I digging through the forum trying to come up with some doing to do to this loin the idea just hit me. The salsa adds a nice sweetness/acidity to compliment the heat.
