Pork... with a side of pork!
I like to make bacon.
Today I fried some up. Bought pork tenderloin this week. So with advice from @blind99 , I rubbed those with some generic pork rub, seared them in the cast iron (in the bacon drippings), and put the whole thing in the oven for about 25 minutes at 375 until the tenderloin hit an IT of 140. Let them rest a few minutes and sliced it up. Going to make delicious leftover sandwiches!
