Grilled Chicken Spiedies

Not being from Binghamton, NY, I do not claim to know what a true Spiedie should taste like. But through the power of the interwebs, I can take a shot at it. My marinade is extra virgin olive oil, lemon zest, fresh lemon juice, fresh basil, fresh mint, fresh parsley, fresh rosemary, fresh oregano, chopped garlic, diced shallot, crushed red pepper, a bay leaf, a little white sugar, cracked black pepper, and kosher salt. All this buzzed up with the hand blender, and then the bay leaf added. This will chill overnight, then will marinate chicken tenderloins tomorrow morning for a grill time tomorrow evening. I will reserve some for a sauce afterwards.
