Sous Vide Chuck Roast inspired by Photo Egg

I have had my Sous Vide for a couple of years and mainly used it to make Egg Bites and reheat meat from the freezer.  Inspired by @Photo Egg Found a Chuck on sale and went for it.  24 hours at 140 with some salt and pepper.  Added the juice to a roux and seared the meat for a couple of minute each side.

Tender, like a good steak.  Surprised at how good this tasted!
