Sunday Family BBQ

Having family over for a family BBQ tomorrow. My mother picked up six racks of beef back ribs. Not my first choice but, hey, I'll smoke anything.

Three racks rubbed with coarse dizzy dust and the other three are rubbed with swamp venom. Thinking I'll smoke between 235-250 for about 4-8 hours.

Any objections? Thoughts on time?

    If anybody gifted me beef back ribs I would be overjoyed.  Your time on the far end will likely be long but depends on the actual meat content.  Just trust the toothpick for the win.
    Beef back ribs beat their pork cousins every time!
    Better to be lucky than good any day.  Enjoy the cook and eats.

    They usually take around 5.5+- hours at 275 for me. Just rely on the toothpick test per @lousubcap.  I wouldn’t open the lid at all for the first 4-5 hours then start probing every 30 minutes till they give up. Enjoy!!

    5-6 hours at 275-300.  Toothpick test for the finish.  Go with the higher temp.

    Final product. Only took 4 hours at 250.

    I had those same ribs from Wegman’s last weekend.  Did not like them - not enough meat and too much connective tissue.  Hope yours are better.

    They turned out pretty good. The smaller ribs were definitely over done and dry but the meatier ones were good.
