Will a big water pan such as on Smokeware's Smokin Flavor Maker serve as indirect heating or do I need to use the Egg plate setter?

I would use plate setter. The water pan will suck all the heat away then as the water evaporates, the temp will spike. The egg is great at retaining moisture.Midland, TX XLBGE

Yes, definitely plate setter. In addition to what @Hook_emHornsfan_74 said, the pan wouldn't deflect/redirect the heat like the plate setter.
