A friend brought some freshly caught trout home from a trip to Canada (caught 6 days ago). Fired up the egg for that, and made a few other things along the way. A charcuterie and cheese board, a play on pasta aglio e olio, and a berries n cream dessert.

Char fish, when I was growing up in British Columbia is like a rainbow trout but lighter in color. I always, at least for me, compared rainbow to the breast of a chicken and Char as the dark meat so to speak when it came to flavor.
Some Char that we used to catch were 4 feet or more in length. ‘Course this was 50 years ago.Michael

Awesome meal! What kind of rub did you use on the trout? It's "Smokin Gal", not "Smoking Al".
