Dad's day beef ribs...

Morning All:
I decided I wanted beef ribs for Father's Day & invited the local son & his family to join us...two slabs trimmed & just on the Egg...rubbed with Kosher salt, Dizzy Pig Game-on, DP Raising the Steaks, DP Red Eye Express & turbinado sugar (excuse the finger in the picture)...a bit difficult to see but there is a container of beans getting the good drippings from the ribs...
Egg set at 250 for about 6 hours (did take it up to 300 for the last hour)...just off & cut for devouring...
here is the bowl of beans...
and also did a few ears of corn on the other Egg...
Now the fun shot...the youngest granddaughter (6 months) trying to figure out what to do with this...I think she knows but mommy won't let her have it just yet...

Yours look better than the ones I cooked yesterday. I tried beef ribs for the first time. What IT did you end up at? Mine were probing good at about 170-180 but I was afraid they were not don.

If I remember correctly the IT was probably 180+ (the last time I checked about 30 minutes before I pulled them it was 175 in most places)...these could have gone another 30 to 40 minutes probably as they were a little bit chewy in some places, but still very tasty!
