OT - Brisket Vietnamese BBQ Dish Cooking Idea for Soup Lovers

I wish I could say I made this but I'm mostly sharing it because I think it would make for an interesting concoction and I'm thinking if I take the time to write it down, maybe I'll actually do it.  Also, it might be a dish for one of our more adventurous specialty chefs in the forum to try out before I get around to making it.  Anyway, here goes.

Vietnamese BBQ Variation: (Essentially, Rice Noodle Soup with Brisket slices added)

Broth:
Pot of boiling water (think crab boiler size)
plus smoked beef rib bones (just the bones, no meat or fat whatsoever)
charred onion
charred ginger
half chicken skin on
hunk of cane sugar (golf ball size, or two, little smaller)
cook for six hours
At 4-hour mark add
cinnamon bark
salt
fish sauce (to taste)
fennel
coriander
sardi? (sounds like, not sure what was said, here)

Cooled, strained rice noodles + hot broth
top off with
cilantro, basil, bean sprouts, scallion
vinegar-ed onions,

Add brisket slice or two to bowl of rice soup
