Smoked Chicken with a lot of Leftovers, suggestions?

Awesome Flavors.  Now I am left with 1lb of white meat and 1 lb of dark meat.  Any suggestions for future cooks?

    Save the bones and fat to make smoked chicken stock. It really elevates rice, beans and anything that calls for a chicken stock. My favorite is chicken noodle soup made with a smoked stock.

    Smoked chicken salad is a winner at my house as well as chicken alfredo. Do not let it go to waste. 
    I drink cheap beer so I can afford good bourbon.

    All to taste:

    My usual ingredients:
    Chicken
    Celery
    Boiled egg
    Onion (or shallots or whites from a green onion)
    Diced dill pickles (or relish.  I prefer wickles)
    Diced jalapeno (pickled or fresh)
    Salt and Pepper
    Mayo
    Mustard (creole or dijon)

    Really you can put anything you want - bell peppers are a good option.  I don't usually include tomatoes because I serve it with tomatoes.  I've seen some go more sweet with grapes and/or raisins, although that's not my thing.  You can add different herbs and seasonings and go for example, in a curry direction, or add some tarragon.

    Lots of options.
