i will be posted on the eggfest recipe page but it takes a few months for that to get updated.  so here you go @booksw

Scotch Eggs
2lbs of breakfast sausage
12 hard boiled eggs ( i do mine in the insta pot, 5 min steam, 5 min natural release and 5 minutes in ice bath)
pork rub of choice (i used lanes bbq signature for the fest)
Panko Break crumbs

Egg is at 275 -300 indirect 

wrap the sausage around the hard boiled eggs until its fully covered
cover the whole ball in rub, then panko bread crumbs.
smoke with apple wood for 35-45 minutes
slice and serve (great if you serve it with a good quality stone ground mustard)
