Inspired by others - Stuffed Pork Tenderloin

Saw a thread a while back and have been wanting to do a stuffed pork tenderloin. Forgot to add the spinach but it did turn out great. Recipe was from hey grill hey. 

Diced bacon.

Carmelized onions.

Butterfly pork tenderloin. Spread cream cheese and add shredded manchego cheese.


Add bacon, onion and this is where the spinach should have been added. Tie up and grilled indirect at 375. 

Added rice and asparagus for sides with glass of Chardonnay. Was delicious. Thanks for the inspiration.
