Killer hogs ap should work fine - take a look at this recipe from Dizzy Pig If tenderloin

So loin and not tenderloin. You got this easy. You want an indirect set up and 350. Season and possibly stuff with anything you like. Cook until IT of 150. Rest 10-15, slice and serve.Sandy Springs & Dawsonville Ga

At the risk of adding confusion, give pork roulade a look thru the forum search function. Some great ideas. Independent of that I would cook til 140*F. But your roast. Running indirect at around 350*F expect 55-70 minutes for a standard sized loin.FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

You are on track with your Mother's Day cook with the above responses but on a future cook give this a whirl:
-slice extra thick chops
-place in a ziploc with equal parts Moore's, Worchestire sauce, and Italian dressing for a quick soak (30 mins or so)
-pat dry and season as you would a steak
-egg hot and fast to desired temp
