Grilled chicken and roasted veggies...sometimes simple is very tasty.
I don't do a whole lot of the magazine worthy cooks that I see on here, but do enjoy the prep and cook. This took maybe 45 mintutes total from beginning to serving.
I made a very satisfying, yet also quite simple meal tonight. Grilled chicken, with grilled veggies. I may have put a little too much spices on the veggies, but they were still good. Red potatoes, orange bell peppers, jalapenos, broccoli and cauliflower, sprinkled with paprika, cajun seasoning, Penzey's Forward spice and crushed red pepper flakes, drizzled with olive oil and roasted on the grill for about 35 minutes.
The chicken is just boneless, skinless ******* marinated in a homemade marinade then grilled direct until just right. Sometimes I tend to dry these out, but they came out good today. And of course, I put Tiger Sauce on mine.
I served this with some grocery store deli macaroni salad which added nothing to the meal and I should have just left it off, but had it in the fridge so put it on the plate..

I’m guilty of only posting the cooks that are really involved or that are unusual. But here’s the thing - the egg is good at producing good, simple meals. Man, there’s nothing wrong with a grilled chicken breast seasoned and cooked to the poper IT. Grilled veggies are good in their own way. The truth is, these are the meals I cook most often at my house. Thanks for posting. Your food looks delicious.

Looks quite good. I have seen some of those really involved cooks of yours. This one is quite appealing too. Quarters are one of my favorite cooks, for their simplicity and flavor, and because a local grocer often has them for .49 cents per pound.

Thank you. It is amazing to me how easy it is to take something that could be boring and bland like diced veggies, and make them delicious with a few spices, olive oil, and roasting to just the right amount of crispiness around the edges.
