Put cut up onion rings in ice cold water for few minutes. Mix self rising floor, baking powder and water....make mixture little bit runney than pancake batter, you want it a little thick because the water on rings when you dip in will thin the batter out if you're doing several batches.. simple batter that makes light crispy rings.

When I was a kid, my parents would drive to Sumpppter. Guy on the side of the road would make boiled peanuts, maybe Bisopville or some were down there , in a shack on a hot plate. $3.00 a pound....made a long trip short......

I go by look...probably 3/4 cup of floor and 3 tablespoons of baking floor, then water.. .I think key is very cold onions going in batter.
