Prime Cap Steaks Redux

Last time I made these I left them unfurled, cooked them direct like a steak and they were really good. At the suggestion of Mark @Sea2Ski and Cap @lousubcap , I cooked these indirect at 250, with a small chunk of white oak (to 118-126 in the different pieces) and then seared hot and fast. Never looking back. These were incredible. N called them “butter steaks”. Check.
