Just pulled off a 12# prime packer from Costco. Rubbed with hardcore carnivore black. Cooked at 250 from 9:30 last night until 8am. Was probing temps from 195-205 throughout the flat and majority of it was probing like BUTTTAH! She’s resting in the cooler now and will slice around 11. Looking forward to trying it.
