    But in reality its made with a paste of soaked cashews which adds a rich creamy buttery texture. I add very little fat which masks the flavors of the spices. Try this the next time. 
    Thanks for the tip Aviator. I've never heard of soaking cashews. I'll have to look into that.

    It's "Smokin Gal", not "Smoking Al".

    Not in my experience. North Indian food is much hotter. I would tell them I don't want it spicy and it would still light my mouth on fire.

    Maybe your local restaurant is trying to cater to local tastes/expectations rather than be true to the original cuisine.  Many Indian restaurants include a mix of regional dishes and maybe it is not serving just northern ones.

    I am talking about when I was in Rajasthan and Uttar Pradesh, India. If that wasn't original North Indian food, then I don't know what is. 
    Grandparents and parents are from Tamil and Maharashtra. Pretty sure I've had plenty of original South Indian food before.
