We are doing a BBQ Fundraiser this weekend and the smoker that was donated for us to use is a Meadow Creek PR60. I have never used one and am trying to get some pointers from people who have. We were planning on using wood as our fuel. Is that a good idea? It seems that most of the stuff I've seen online they use charcoal birquets for their fuel. My biggest concern is holding a steady 250 overnight. This smoker will be cooking from midnight Friday to 4:00 Saturday afternoon. Any tips and help is greatly appreciated.

Calling @DMW as I believe he has that rig. He does use briquettes as I recall but hopefully he will be along.

@DMW is the Meadow Creek man. He brought it to Butt Blast and did a whole hog. I’m pretty sure he used briquettes.

I'm in California. I think that Bryce Harper deal was a bit...
I use briquettes in the PR with wood chunks for smoke. If you load it up, you can easily run at 250* for the time you are needing it. Light it on both ends and let the fire burn towards the center. It works like an egg, it's an oxygen controlled fire. Bring it up to temp like you would an egg, slowly closing the dampers as you approach desired temp. Let it stabilize for an hour before you load the meat and don't chase temps.
I'll still be in California for work this weekend, but if you start a progress thread I'll try to check in and provide advice as I can.They/Them

Just tried that but it didn’t work. Actually @BUFFALOMOOSE is the guy that needs it. He put me on onion slicing duty tomorrow and that’s as close as I’ll get to any grill or smoker.=======================================

@DMW. How how many pounds of briquettes do you need to load it up? What do you think about using a mix of charcoal and briquettes. I think the charcoal Burns hotter and faster but we have quite a bit on hand. Using strictly wood seems to be out of the question?South Buffalo, New York

Finally got in to Tampa today at 2 pm. Was supposed to get here at midnight last night. The plane that was coming into Buffalo to take us to Tampa via Charlotte the beverage cart was not locked down in the back and went from the back of the plane to the front of the plane dented the door of the cockpit and injured people. Two stretchers were called in. Needless to say my connection was ruined. Hopefully things go better for the rest of the weekend.
