Homemade smoked bologna
I’ve been stuck in St. Louis a lot lately and tried Salt n Smoke’s smoked bologna. It was the best thing of the 3 meats I tried and I really liked it so I thought I would try my own.
3 lbs medium ground beef
1 Tbsp salt
3/5th tsp Prague powder
1 TBSP each: garlic powder, onion powder, brown sugar, paprika.
Emulsified in the food processor with water and ice cubes.
Folded in a cup of cheese cubes and a diced jalapeño.
Formed into logs in plastic wrap and let sit overnight in the fridge.
Smoked 3.5 hr at 275 until 160 internal.
For a first attempt to copy with no real recipe I’m pretty damn happy with the results. Need to work on getting uniform chub size.

I remember back in the day when "Hoss" introduced us to smoked "loney".
I don't recall everything he did, but I do recall a slather made up of mustard and maybe worcestershire sauce and maybe some other ingredients. Any old heads recall his technique? And when you did, he'd send you:Lrg 2008
