Sparked up my XL and kept the coals and fire to one side. No plate setter, set the steak off to the side for indirect until IT hit 115*, pulled it and cranked up the heat for a Caveman sear. Great medium rare. Used Fogo charcoal premium on this cook.

Thanks! I like unique things. The knife was made by a Neil Kamimura from Hawaii. He is a Forged and Fire champion.
The fork handle is Elk antler made by a guy in Montana.

I wish I had the answer. Its hit and miss at my Costco. It looks awesome. I have never seen these at Costco. I have seen them at Sams but never pulled the trigger on one because I haven't seen one that looked great. Yours does indeed look great both raw and cooked.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
