    Can you flip those grill grates over and have a flat surface to cook on? I grill more chicken parts (breasts mostly), fish and but occasionally toss a steak on (small one since it's just me). So having something that would easily work with those types of meats would be something worth looking at.
    Also, did you season those before the first cook? Not sure if I'm sold on grilling (high temp especially) with aluminum. Cast iron and stainless, yes.

    Yes, they are flat on the other side.  You just season them with some cooking spray once.  That's it.
    What's wrong with grilling with aluminum?  It's a great conductor of heat.  You cant go nuclear with it, but you really dont need to.  That's the beauty of it.  Everybody winning the SCA championships are doing it with Grill Grates.
