Reverse seared pork tenderloin.

Quick, easy weeknight cook tonight. Made up a paste with some herbs, garlic, and olive oil and smoked at 275 with some pecan until IT of about 125 then rested for a few while the heat cranked up at seared at 500 until IT 140. Served with some Parmesan roasted cauliflower.
