A little brisket

Picked up a little brisket at the Dallas Farmer's Market awhile back and stuck it in the freezer. And by little, I mean 4.71 lbs!! Yes, it was a full packer brisket, 100% grass fed if I remember correctly. Made a rub of about an ounce of kosher salt, and ounce of fresh ground black pepper, a bit of onion and garlic powder, a smidge of paprika and a hint of chilli powder. Brisket went on around 10:30 with some hickory and mesquite

Brisket came off around 5 and was rested for 30 minutes before slicing. Total cook time was around 6.5 hours at 250 grate temp.


Brisket came out really good, although I didn't get any sliced pics. Very tender and moist The size was great for just three people and there will be plenty of leftovers.The knife worked amazingly, couldn't recommend it more and glad somebody here on this site recommended it.
