Morning All:

Did a few wings last night for dinner...first brined for about 2 hours then used four different Dizzy Pig rubs...Drums at the top were Peking, flats on the left were Bayou-ish, flats on the right were Red Eye Express & the drums on the bottom were Mediterranian-ish...Just on the Egg indirect at about 200 with a couple small chunks of Guava for smoke...

Two hours later ready to come off...dome temp is now about 375 as it slowly rose over the two hours...came out very juicy & delicious...

Have a GREAT day!

Wings for the win every time.  Way to keep the wings and rubs sorted out.  Looks great.
    Your preferred rub?

@lousubcap ; --  I like them all, but prefer drums to flats so the Peking & Mediterranean-ish were for me while the flats were for my much better half who prefers flats & chose those rubs.

    Have a GREAT day!

  • Those look good. I've switched to boneless wings for most of my cooks. I take chicken tenderloin and cut it into strips and then do them like wings. Been working out pretty good. I'm the only one in the family that likes wings on the bone.
