So how long is too long to marinate flank steak for jerky?

say you buy it from Costco, slice it an place it in a ziplock in whorse and soy based marinade. How long is too long before you wouldn't dry it out and eat it any more? 3 day,, 5 days, a week, more??

Brother, I'm telling you this Alton brown recipe is amazing, I also get my flank at costco. I do not alter this in anyway and I've made this at least 50 times!

I agree, I'm in the position of that I started it marinating last weekend and then was unexpectedly sent out of town for work. Can I dry it out yet today and eat it?

I only marinate the whole flank steak. Your route should tolerate several days but with a mild degradation in texture.Sandy Springs & Dawsonville Ga

After a week the quality will suffer and the texture become mealy. Depends on what Whorse is as that is undefined. The acid in any good marinade will make the protein mealy over time.Sandy Springs & Dawsonville Ga
