Pork loin question

Freezer dive produced about 2/3 of a full pork loin.  Defrosting now.  Only cooking for two of us and I don’t want to cut it down and refreeze.  I’m looking for suggestions for things to cook over multiple days, not one huge single cook, but I dont mind freezing leftovers of something cooked like I would with brisket or pulled pork.

any ideas?

    Stuffed pork chops, schnitzel sandwiches and pork fried rice.  First things that come to mind.

    Cut off a couple chops and a small roast. Do the chops tonight after a short salt/sugar brine. Marinate the roast and do it on Saturday. I like to use a rotisserie. Slice the leftovers paper thin and enjoy sandwiches for football on Sunday. Brine cure the rest and make a small batch of Canadian Bacon.

    fried parmesan crusted pork chops with hot cabbage slaw with bacon and toasted walnuts.  made that a week ago, might make it again this weekend
