    I let some age for 9 months, and it still tastes like an ashtray.  Finally threw it in trash. Everyone that tasted it said it smelt like burnt wood!
    Ya these were a little ashtrayish. I was hoping it was just me but nope SWMBO thought so too. My dad liked it though.

    I just opened the last block of smoked cheese from Nov 2017!  It was AWESOME!!  Stored in my beer fridge @ 38 degrees in foodsaver wrap.

    The     L  O   N   G     storage allowed the smoke to penetrate fully!
