Hickory smoked St. Louis ribs and chipotle BBQ Beans

"BBQ is just for summer, right?" A question posed by a dinner guest last night, when I presented them with ribs 'n' beans. The ribs had been cooked 3-2-1 at 225F over hickory, rubbed with a 2:1 mix of Dizzy Pig's Dizzy Dust and Crossroads. Finished with a Carolina BBQ sauce for the final hour. I smoked the beans over hickory before putting the ribs in, and reduced the beans during the 2 hour wrap stage atop the PSWoo extender.
Our dinner guests left full of good food (and wine), secure in the knowledge that BBQ is definitely more than just a summer sport. The recipe for the beans is linked below:

@SaintJohnsEgger there's no way those ribs would fit in a MMX.
@pgprescott right back atchya! The new job has taken quite a bit of time with travelling, I haven't had much time to visit here unfortunately, so I've probably missed some of the good stuff you (and others) have been putting up. Things should be back to normal in 2019.
Also shout out to @tjv I'm really liking the PSWoo setup. So glad you managed to get it shipped to the hotel I was staying in when I was in the USA.

Yeah, And I think your FB pst even mentioned the beans were done on the LBGE. I sort of regret selling my BGE but I got $1600 for it. So I could pass that offer up. Now its the electric smoker or the MMX for everything.Stormbringer said:Marshall in Beautiful Fruit Cove, FL.

@Stormbringer Yes I sold it. Still have the MMX and I want to master it. I needed the room on the back porch and with basically just me and the wife these days the MMX handles anything I need except for large pieces like ribs or brisket and I can just cut those before smoking.
I want to master the MiniMax as well as the electric smoker. I also want to get a stick burners.
The main thing is that the offer was too good to pass on. Used the money towards some front yard landscaping for the wife.
I may miss it some but I'm happy.
