Prime Rib Roast - Travel time ??

Doing a 10lb Rib Roast seasoned with McCormick Montreal Steak seasoning
*Indirect @ 225º\ with 600º sear finish.
*Pull at IT of120º before Sear.
*Have 1 hour 30 minute travel time.

Will Foil to Cooler overcook during travel time ?
Suggestions ??

    I cook and loosely  cover with foil for the rest. I am not a believer in doing any searing. If you low and slow, generiously season....you will get a nice crust. The rest will be fine for an hour or more before slicing. 

    Don’t forget the horseradish....don’t try to use the partial one that’s hiding way back behind the mayonnaise.

  • I have left the probe in it, foiled, wrapped,and placed in cooler.  I checked temp over the next 1.5 hours, and it gained 7-8 degrees in 1 hour, stalled for about 15 minutes, then slowly started to drop.  

    Then we ate it.  It was perfect medium rare!
