My wife and I bought a nice small Turkey and figured we’d give it a shot since we’ve killed off the Mad Max Turkey

Not sure what temp you're cooking at, but watch out for some flare-ups and/or charring on the bottom. I usually go indirect with spatchcocks, but when I go direct I try to get the grate higher in the dome.Stillwater, MN

Cool yeah it turned out well. The lump level was pretty low so only raised the grid about 1 - 1.5”.

Very nice...
Try starting out skin side down next time.
It will render the skin better. Let it go till it looks nice then flip it over and put in your temp probe.Thank you,DarianGalveston Texas -
Looks awesome! Spatchcocking is the only way I do birds (that sounds perverse, but really isn’t).Stillwater, MN
