  • I use any spice but have been on meat church lately and follow the Malcom reed how to BBQ right marinade. Chicken or beef can be used. It's amazingly good stuff. Also you've got to,have peppers and onions. I prefer skirt tomflank for fajita.

    cant help with the seasoning, but try this instead of the sour cream. for some reason its in the cheese section of my store

    Skip the cheese altogether.

    if you’re grilling, grill the whole steak as Matt suggested.  If you’re griddling on a blackstone or wok, then drain/dry them first.  You can add marinade back in when cooking in a wok or griddle to finish, just use reserved clean marinade.  Marinade with a little oil, lime juice and seasonings.  Doesn’t have to be lots of liquid.  A touch of soy or Bragg Aminos or Worcestershire sauce always helps - just balance with the salt you add.  I usually use garlic, s&p, cumin, Mexican oregano, something for heat.  

    important to add chili peppers to your veg mix - poblanos are good, I always cook jalapeño strips - seeded and ribbed for her pleasure or intact for the heat.  They do mellow when you cook them.  Tomato wedges griddled or grilled until charred are a great addition.  Roma’s.

    Char your tortillas, don’t microwave or steam them or god forbid, serve them cold.

  • I have never used a fajita seasoning .  I put Strawberry’s steak seasoning on whatever meat I grill . I then put the veggies in a plastic bag with a little oil and put salt , pepper , and maybe garlic salt on it, shaking this up. I cook the peppers / onions in a cast iron skillet on the egg . Tastes pretty good . Not an answer to your question , but try it some time !
