Turbo+Injection=Money

I stopped going low and slow on my pork butts a while ago due to lack of time, but was missing the moisture with the turbo method.  I injected a turkey for Thanksgiving and loved the results so I thought I'd try it with the pork tonight.  The results were awesome, probably the most tender and moist pulled pork I've ever made.  I now have a better injector on my wish list for Santa and can't wait to try it with a brisket!  I'm converted - highly recommend injecting.

    Get some of the veterinary Simcro injectors for like $10 each. Stick the suction hose into your container, and pump away. No need to spend big money on a kit, these work great. You can find a batch of like 20 needles for $10 or so, just make sure you don’t get the really short ones.

    For Pork I inject 50/50 apple juice and cider vinegar. Comes out great.

    Whatever tool you use, inject thru some sort of shrink wrap to contain the collateral damage to manage the clean-up.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I used this except I replaced apple juice with apple cider.  

    Chris Lilly's Six-Time World Championship Pork Shoulder Injection
    3/4 cup apple juice
    1/2 cup water
    1/2 cup white sugar
    1/4 cup table salt
    2 Tablespoons Worcestershire Sauce
    Combine all ingredients and stir until sugar and salt are dissolved.
