Looks like these are $25 off starting tomorrow. I’m a newbie to this whole roast. How much work goes into trimming and cutting into steaks? Sorry for the naïveté on this topic

I bought an alleged prime NY strip loin at a good price but was disappointed with the quality of the meat, and I did end up trimming a fair amount of hard fat before slicing into steaks. I've regularly found precut choice grade NY strips that were better than those from the prime loin, which I couldn't see through the cryo packaging. Could have just been bad luck on my part, though. Could also depend on how comfortable you are returning an opened 15-pound hunk of meat, which my conscience did not allow.Stillwater, MN

I have been mostly pleased with their meats, and have bought more from them than anywhere else. That said, I have a few roasts that were marked as prime, but when it was cut into did not look like prime. But still no complaints.
As far as slicing the roast into steaks, if you can slice a loaf of bread into slices, you can cust steaks - you just may need to use a bigger knife. Trim the fat as you feel needed. Personally, I do not trim anything off unless going to dry age (separate discussion). I leave it all on and let the consumer of the steak do the trimming on on their plate.--------------------------------------------------
