Well I put a 14.23 lb bird on the Medium. Spatchcocked, indirect, rubbed with John Henry's Maple Brown Sugar Rub from the gift exchange, and with half a stick of nearly frozen cultured butter under the skin of each breast. I will try to remember pictures but I'm in a bit of a hurry, got to give the dog a bath before the first temperature check. Right now he is eating the tail bone and the excess skin. The giblets are on a skewer on top of the turkey.

I found a new way to flatten the bird after backbonectomy and flip over. I put a towel on it and then stepped on it(on a cutting board on the floor). Broke the sternum easily.

You can also cut the keel bone and the bird will flatten easily!
