Looking for something different tonight with wings, and since the above book never disappoints,  decided to give it a try.  Was surprised to find a 'simple' recipe, easy to do.

These were fantastic!  My go to wing recipe now.   Cooked two batches of Costco wings, one with this recipe on the Mini Max (MM) while my normal recipe (of just whatever I feel like at the time) on the Large.

I was surprised how well the MM cooks wings, they came out great there with a setup of indirect 350F.   The skin crisp up much better than the Large.  This will now be my go to wing machine.

Why do you suppose the wings crisped up more on the MM than the Large? Curious as a Large owner. Thanks.

I would guess because of more radiant heat from closer ceramics, but that’s just a guess.

Serious BBQ really does always deliver!  Those look great! I did some wings tonight with DP Pineapple head with some habenero pineapple teriyaki sauce I made.  I’ll have to try APL’s recipe next time.
