I am using a water pan for the first time, cooking a spiral ham.
I had the egg dialed in, added water pan and the temperature dropped significantly. Should I chase temps or will it come back up, it has been a hour or so

The water is an unnecessary heat sink in an egg.

The deal with the water pan, in addition to the heat sink, as long as it has water things will run stable (don't chase the temp with your settings-it's like adding a large hunk of cold protein). Should it dry out, then your BGE temps will rise as the heat sink has evaporated. FWIW-
