Filets with Madeira and mushroom sauce

Thanks to @Stormbringer , made this for my birthday dinner tonight.  Didn't get all the photos, but, it was an excellent dinner.

Reverse sear, high in the dome indirect at 300, the seared at 600.  Served with https://thecooksdigest.co.uk/2017/09/29/madeira-and-mushroom-steak-sauce/

So good!

    So I looked up the recipe. My, my, a UK site that has Dizzy Pig Red Eye as part of the sauce ingredients. Haute cuisine, a' la Manassas.

    I do not have the Red Eye, so I added just one tsp of Ghost.  It was perfect for the wife, I could have added more.  First time cooking with Madeira, definitely not the last!

    Reheated some leftovers at my school today.  A teacher walking down the hall with a line of students answers one of her students question, "Oh, I am sure it is Mr. Bishop and his leftovers from last night"  :)

    Thank you, your posts are inspirational for us that like to stay at home, rather than 'go out'.

    Should probably review your photography post and not just post a pile of meat, and no plated pics.  But, it sure was good, served with asparagus and Cesar salad.
