Caribou Steaks

Last night I pulled some caribou from the freezer that needed to get cooked up. 

Let them marinade in Allegro for a few hours, tossed them in the Sous Vide on 125 for an hour, then rubbed with some Dizzy Pig Game On. 

I was was at the butcher this week and they started selling rosemary garlic beef tallow. A little in the cast iron on the MiniMax and BAM! Dinner.





I would have posted last night but after dinner everyone cut loose, the flamethrower came out, my a$$hole neighbor called the cops, THEY came in and hung for a while, then my wife told me it was time for me to go to bed...it was a whole thing.

Not quite a weekend in NOLA with Kerry and the rest of y’all, but it will suffice. Now for a Sunday nap.

    @SonVolt I would never commit such a crime on almost any other critter (except javelina)....but if you’ve ever had caribou you know it is not the filet mignon of the Venison world.

    Oh I know, I was kidding. I've always got a bottle of Allegro in my fridge for dubious cuts. I hate Dale's with a passion, but I can deal with Allegro when I need that style of marinade.

    Yeah I don’t know if Dales is just that bad or I just had bad food with it in my childhood but I can’t stand it. 

    Allegro makes one called “Game Tame” that I use. Heavy garlic.

    @Legume that was serving it! Haha. I put it on that cutting board and they never made it to plates. I served everyone hamburgers after. My crew consists of a lot of knuckle draggers.
